Program Description – A 3-week course focused on localized food systems in Italy. We will explore markets and local food production in Rome and Trevignano (on Lake Bracciano), and small-scale, regenerative farming on Pulicaro Farm. Includes workshops and conversations with local food producers and artisans, and hands-on learning with food labs.

This program is designed to introduce students to a food system that is different than the dominant food system in the USA. The system we will be studying and immersing ourselves in is reliable on small-scale farming and local currents of food exchange.
